Backstory
Hitsugaya's life prior to his death has not been discussed, but it is clear that he died at a very early age. As a spirit in Soul Society, he grew up in Junrinan, district 1 in Rukongai, with a kindly old woman and Hinamori Momo. He was a bitter and slightly belligerent child who always felt as though he had more to prove than anyone else, calling Hinamori "Bedwetter Momo" yet indignantly demanding she stop calling him "Whitey-Chan" on account of his white hair.
When Momo decided to join the Shinigami Academy, Hitsugaya expressed a bitter apathy regarding becoming a shinigami, commenting, "Stop kidding Who'd wanna go to a Shinigami's school ?" Hinamori would often come back from academy on her days off and talk to an uninterested Hitsugaya about her times there. Still, eventually he decided to attend the Shinigami Academy as well. While neither manga nor anime talk about why he decided to become a shinigami, it can be inferred that he was driven by his desire to protect Momo.
Hitsugaya excelled throughout his time at the academy, and rose quickly through the ranks of shinigami, becoming the youngest Captain of the Gotei 13 in the history of Soul Society. While Momo served her entire career under Captain Aizen, Hitsugaya served under the unnamed Captain of the 10th division, whose place among the captains he eventually claimed. During this time he also befriended Jidanbo, the Sereitei West Gatekeeper, and taught him about proper ettiquette.
When Ichigo and his allies broke into Rukongai and the Sereitei, Hitsugaya began to suspect 3rd division Captain Ichimaru Gin of trechary, particularly regarding the invasion of the ryoka and on account of Captain Aizen's suspicions. Worried about what was to follow, he warned Momo to watch out for Ichimaru and those who served under him, including one of her close friends and lieutenant to Ichimaru, Kira Izuru.
It was not long after the invasion of the ryoka before Captain Aizen mysteriously died. His body had been left out in the open, where Momo discovered his murdered body. When Ichimaru and many of the Vice Captains arrived at the sound of her shriek of shock, she attacked Ichimaru, only to be countered by Kira. Hitsugaya broke up the fight and ordered both Momo and Kira placed in detention cells, then turned to Ichimaru and warned him that if he allowed Momo to spill so much as a drop of blood, he would kill the other captain.
Shortly after Kira was released by Ichimaru and Momo broke free from her cell, Hitsugaya confronted Ichimaru regarding his release of Kira, only to be attacked by Momo, who had been fooled into believing that Hitsugaya was the one who had murdered Captain Aizen. The prodigy captain managed to deflect Momo's attacks, but in her fury and pain over what she believed to be the ultimate betrayal of her childhood friend, she gripped her sword so tightly that her hands bled. Holding to his oath and believing Ichimaru to be the one who had framed him, Hitsugaya attacked Ichimaru, who managed to escape by attacking Momo and leaving a concerned Toshiro to look after his childhood friend..
Captain Aizen was later revealed to have staged his own death and killed the central governing office of the Soul Society. Hitsugaya found the traitorous captain shortly after he had run Momo through with his zanpakuto. Although he tried to defeat Aizen using his bankai, Aizen's power of illusion proved too much for Hitsugaya, and he was quickly defeated. Both he and Momo were tended to and eventually healed, although Hitsugaya still felt that he had failed by allowing Momo to get hurt.
Later, Hitsugaya travelled to the living world with several other Shinigami to assist Ichigo with the invasion of the Arrancar. He and Matsumoto stayed with Orihime while in the physical world, although he remained on the roof for most of the time. After the arrancar invaded and were then repelled, he was ordered to return to Soul Society and prepare for war with Captain Aizen.

Personality
Hitsugaya is mature and serious, and shies away from childish activities. Although a severe workaholic, he does still have a few hobbies on the side, most notably calligraphy and sumi-e.
While he is not particularly arrogant despite his significant achievements, he believes in good manners and proper ettiquette, calling people by their family names and using honorifics and expecting the same treatment in return. He trusts in his lieutenant and those under him, and firmly believes that he is doing the right thing. While he does not go against the laws of soul society if he can avoid it, he is more concerned about what is right and just than what is legal.
Hitsugaya is fiercely protective of those he cares about, particularly Hinamori Momo. Since Momo's near death, he has been struggling with feelings of guilt and helplessness. When Momo is in danger, his normal composure and decorum vanish entirely, and the only thing he can think about is protecting her. She is the most important person in his life and he would give anything to protect her.
Hitsugaya has a particular weakness for the taste of watermelon and, possessing great reiatsu and on account great hunger, will happily devour dozens of them if given the opportunity. Otherwise, he is not particularly fond of summertime activities or warm weather in general.

In Landel's
Since waking up in Landel's, Hitsugaya has promptly been humiliated in front of Ichimaru Gin, met up with the other shinigami, and halfway befriended a young man who claims to work in a "flower shop" named Omi. He is currently being introduced to all of Abarai Renji's friends, and coordinating efforts to get everyone trustworthy together to storm the doors of the Head Doctor by force.

The Psychic Section
The following bits are for psychic-types...

  • Hitsugaya is secretly in love with Hinamori Momo, a fact that he has repressed so far down as to hide it even from himself.
  • He is terrified that he will fail to protect those he cares about once again. His failure to protect Momo haunts him.
  • He has ultimate trust in Matsumoto Rangiku, and relies on her without question.
